Recipes for All Occasions

There is a holiday almost every month, on top of birthdays. OrĀ  maybe you even do special things as a family when your kids get their grade cards or win a baseball game. No matter what the occasion, you can find recipes everywhere for anything.

Let’s take the baseball theme. If your kid wins their first game or wraps up the season, create cupcakes. Ice them with white icing and add red stitching. It makes it more of a special occasion and a more memorable one. Plus, it’s fun! Mom, don’t be afraid to let your kids help decorate.

One of my personal favorites isn’t even for a special occasion. It’s for a health snack. Take red apple slices and quarter them up, line the white inside with peanut butter and stick marshmallows between the two peanut butter covered apple slices. They look like mouths! So cute and makes snack time fun and easy. For breakfast, if you have time to make pancakes, make them into fun shapes like turtles or Mickey Mouse.

It’s also okay to make throw together dinners that the whole family will enjoy and it’ll be quick. One of my personal favorites is a chicken casserole that’s pretty much a dump together recipe. Easy cooking is good parenting. You don’t have to make a huge effort for every dinner. My favorite recipe is so easy, filling and doesn’t even really require any other side dishes to go along with it. Line an 8 by 13 inch cooking pan with crunched up tortilla chips. Then take chicken breasts and precook them and cube them up (I actually prefer using already cooked canned chicken for simplicity, plus it tastes the same), toss in a can of mushroom soup and a can of cheese soup (or maybe you can substitute it with cream of chicken soup, depending on your family’s tastes), dump in a can of black beans, maybe top it off with a few more tortilla chips and some shredded cheese, bake for 30 minutes at 350 degrees and alas, a wonderful, healthy, delicious meal.
