Keep an Eye Out for Corned Beef and Ham Clearances

I went to Food Lion today and got some really nice deals on meat, including corned beef marked down twice. $6 for one and $7 for the other. They were a bit over half price and don’t even need to be frozen until May 11th, but I popped them right in the freezer. These are huge cuts and will make three days worth of meals, so I’m pretty happy with them. I expect that they’ll be marked down again next week and I’ll be kicking myself for buying two this week, but I didn’t want to risk them selling out. I don’t see any hams marked down yet, but they probably will be marked down in the next few weeks.
Don’t forget that you don’t necessarily have to make the traditional corned beef and cabbage meal. We enjoy corned beef sandwiches and corned beef, eggs and hash browns, too.
Thinking you ate one corned beef sandwich this year and that was enough? This guy managed to eat 16 3/4 sandwiches in ten minutes! Can you imagine how gross he felt afterward?
