Kids Snack Ideas – Cheesy Apple Quesadilla Recipe

We’re trying out a set of recipe ideas for healthy snacks and lunches. I have permission to post the recipes, so I”m going to share them with you all. These Cheesy Apple Quesadillas are a great after school snack or a weekend lunchtime treat. We made them in the microwave, which meant we could skip the butter. Depending on the power of your microwave, you’ll need to cook them from 15-25 seconds.

Ingredients:
2 apples
6 whole wheat tortillas
1 1/2 cups shredded cheddar cheese
2 tablespoons butter

Instructions:

Thinly slice apples. Sprinkle tortillas with cheese.Layer several slices of apple on each tortilla. Add more cheese on top of the apple slices. Fold tortillas in half.  Heat butter in skillet and cook quesidillas in skillet until cheese is melted and tortillas browned (both sides), this takes about 2 minutes per side.
